Why when my PH is high and I treat it it makes my ammonia high. Then when I treat that it makes my Nitrite high? Isnt there anything I can use to resolve all issues at once?

If the ph in your tap water isnt to bad just do more water changes. I never have to chemicaly alter my ph as I do small changes every two days, usualy just after they have eaten to get any waste up and vaccumm the rocks.
You could try peat moss but that changes water colour or drift wood etc.

How high is your PH? From everything I have read they can handle anything from 6.0-8.0. I would think unless your Oscars are reacting poorly to the water to leave well enough alone, i would think that amonia and nitrite's would be worse on the fish. That is just my 2 cents.

Nitrite and Ammonia is VERY bad for fish. Nitrates not good either but tolerable...pH is not the problem. You need to transform your NITRITE into NITRATE using biological filtration, ie gravel, bio-wheels etc....should also use up the ammonia etc...and when you do water changes it will get rid of the nitrates etc....so frequent water changes are very important.
